Ingredients
1/4 cup unsalted butter; softened
4 large Idaho potatoes; sliced (1/8 to 1/4 in)
1 medium onion; sliced (1/8 to 1/4 in)
10 oz sharp white cheddar; grated
1 1/2 cup heavy cream
1 tsp salt
1/2 tsp pepper
Directions
1. Preheat oven to 350F.
2. Butter a 1 1/2 qt baking dish with about 1 tbsp butter.
3. Arrange a layer of potatoes, a layer of onions in the baking dish and sprinkle some cheese over them. Continue layering potatoes, onions and cheese until you used them all ending with a layer of potatoes.
4. In a small bowl, whisk the cream, salt and pepper until it thickens and pour over the potatoes. Dot the remaining butter over the top of the potatoes. Bake for 1 to 1 1/4 hours or until the potatoes are tender and golden brown.
Let stand for 10 minutes before serving.
