Hasselback Roasted Potatoes

Ingredients
8 medium yukon gold potatoes
extra virgin olive oil
kosher salt
ground pepper
1 tbsp butter
Directions
1. Preheat oven to 400F.
2. Line a baking sheet with aluminum foil and slightly oil.
3. Slice a small portion off the bottom off the bottom of potatoes so they will lay flat and be stable.
4. Partially cut 1/8" thick slices leaving about 1/8" to 1/4" solid on bottom of potato.
5. Place potatoes on the baking sheet and drizzle with oil. Sprinkle salt and pepper over potatoes. Place a small pat of butter on each potato.
6. Roast potatoes 30 minutes until golden brown.
