Ingredients
2 medium tomatoes; cut in bite sized pieces
1 small cucumber; thinly sliced or diced
1 small red onion; thinly sliced or diced
1 cup fresh basil leaves; torn into small pieces
1/2 cup olive oil
3 tbsp balsamic vinegar
salt; to taste
fresh ground pepper; to taste
6-8 thick slices country-style white bread; torn in bite sized pieces
Directions
1. In a bowl, combine tomatoes, cucumber, onion and basil. Drizzle with olive oil and balsamic vinegar, season with salt and pepper and toss well.
2. Place half of bread in a wide, shallow bowl. Spoon half of tomato mixture over bread. Layer the remaining bread on top and then the remaining tomato mixture. Cover and refrigerate for 1 hour.
3. Just before serving, toss the salad and adjust the seasonings with salt and pepper. If bread seems a little dry add a little oil or vinegar.
Serve immediately.
