Ingredients
2 medium eggs
1 3/4 cups milk
1/2 tsp vanilla extract
2 cups flour
1/4 tsp salt
4 tsp baking powder
2 tbsp sugar
6 tbsp butter; melted
Directions
1. Separate the egg yolks and whites into two different mixing bowls. (Be careful not to get any yellow egg yolk in with the egg whites or they wont beat to stiff peaks properly).
2. Add milk and vanilla to the egg yolks and whisk together.
3. Sift flour, baking powder, salt and sugar together in a large mixing bowl.
4. Beat the egg whites until they form stiff peaks.
5. Add milk mixture to dry ingredients and beat until batter is smooth.
6. Add melted butter to batter and mix well.
7. Fold the stiffly beaten egg whites into the batter.
8. Preheat waffle iron.
9. Ladle some batter, about 3/4 cup, into the center of the preheated waffle iron, enough to fill the lower grid, and spread it out with a heatproof spatula.
10. Bake for 3 to 4 minutes or until waffle iron signals it is ready.
