Pancakes

Ingredients

1 1/4 cups flour
2 tbsp sugar
1 tbsp baking powder
3/4 tsp salt
1 1/3 cup milk
1 medium egg; slightly beaten
3 tbsp oil
1/2 tsp vanilla extract
butter
maple syrup

Directions

1. In a large bowl, mix flour, sugar, baking powder and salt. Add milk, egg, oil and vanilla. whisk for 10 seconds. Let sit for approx 10 minutes.

2. Heat griddle or skillet over medium heat until drop of water sizzles. Lightly oil the griddle.

3. Pour about 1/4 cup of batter by onto griddle per pancake, making a few pancakes at a time. Cook until tops are bubbly and start to burst and edges will look dry. Flip and cook until undersides are golden. Place on warm platter and cover to keep warm.

4. Repeat until all batter is used, oiling griddle when needed.

Serve pancakes with butter, syrup or topping of your choice.

Note:
You may add fruit to batter (about 1/2 cup) for flavored pancakes.
