Breakfast Quiche

Ingredients

1 9 inch pie shell
4 eggs
1/2 cup milk
salt; to taste
pepper; to taste
1/2 medium onion; chopped
4 oz cheese; shredded

Spicy Quiche:
4 oz monterey jack-jalapeno cheese; shredded

Spinach Quiche:
8 oz spinach; fresh or frozen

Directions

1. Preheat oven to 350F.

2. In a medium-sized mixing bowl, whisk together eggs, milk, salt, and pepper until well combined. Stir in desired cheese.

3. Add the ingredients for the quiche you are making into the bowl with the egg mixture and stir to combine. Pour the mixture into the pie crust.

4. Bake in a pre-heated 350 degree oven for 40-45 minutes until center is set.

Spicy Quiche
Ensure you use a spicy cheese.

Spinach Quiche
Cook down fresh or thaw frozen spinach and wring out excess water. Cook onions and add to spinach.

Notes:
You can omit the pie crust and use a muffin tin, bake for 25 to 30 minutes.

Be original and add or substitute your favorite ingredients like potatoes, tomatoes, mushrooms or asparagus.
