Ingredients
3 1/2 cups flour
1 1/2 cup sugar
1 1/4 cup brown sugar
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp nutmeg
1/4 tsp cloves, ground
1/4 tsp allspice
4 small eggs; slightly beaten
16 oz pumpkin; canned
1 cup oil
1 cup cold water
3/4 cup pecans; chopped
1/2 cup raisins
Directions
1. Preheat oven to 350F. Grease 2 loaf pans.
2. Mix first 10 dry ingredients in large mixing bowl.
3. Add eggs, pumpkin, oil and water and mix well.
4. Stir in nuts and raisins if you are using them, they can be omitted.
5. Pour mixture into loaf pans. Place in oven and bake for 70 to 75 minutes.
6. When finished remove and place on a cooling rack to cool slightly.
Remove bread from loaf pans and slice to serve.
Note:
You can use a muffin tin and bake for 35 to 40 minutes.
