Ingredients

2 plantains
oil; for deep frying
salt; to taste

Directions

1. Preheat oil in deep fryer to 350F.

2. To peel the plantains, cut off both ends of plantain, slice lengthwise down both sides of plantain, peel and remove.

3. Slice plantains crosswise in 3/4 to 1 inch sections.

4. Carefully place 5 or 6 plantain sections at a time in the heated oil and fry for about 3 minutes until lightly golden on all sides. Remove from fryer and place on paper towel to remove excess oil.

5. Place a fried plantain section in a plantain press and flatten to 1/8 to 1/4 inch thickness. If you don't have a plantain press, place plantain section between 2 pieces of parchment paper and use a heavy skillet to flatten the plantain.

6. Perform steps 4 and 5 until all plantain sections are flattened.

7. At this time you can continue to prepare the Patacones or they can be frozen for future use.

8. Carefully place 3 or 4 flattened plantains in deep fryer for approximately 3 minutes, until golden brown. Remove Patecone's and place on paper towel to remove excess oil. Salt to taste.

Serve immediately with Salsa Fresca or other salsa.
