Ingredients

1 small serrano chile; or red habanero, seeded
1/2 cup white vinegar
1/4 cup water
1/4 tsp salt
1 tsp sugar
1 tbsp lime juice
2 tbsp vegetable oil
1/2 cup fresh cilantro; chopped
1/4 cup fresh parsley; chopped
1/2 cup scallions; chopped
1/2 cup tomato; chopped

Directions

1. Put the vinegar, water and chile in a blender and blend for 2 minutes.

2. Place the remaining ingredients in a bowl and stir to mix. Add the vinegar and chile blend to the bowl and mix well.

Serve in small bowl.

Note:
Pour in a glass jar and cover. Can be refrigerated up to 10 days.
