Ingredients
1 large Oven bag
4 cornish hens; approx 1.5 lbs each
3 tbsp flour; divided
1/2 cup orange marmalade
2 tbsp soy sauce
1 1/2 tsp ground ginger
1 cup rice; uncooked
2 cups chicken stock
1/2 cup orange juice
2 oz Gran Marnier
Directions
1. Preheat oven to 350F.
2. Shake 1 tb. flour in oven bag; place in 13x9x2" baking pan. Wash hens; pat dry.
3. Place hens in bag.
4. In a small bowl, combine remaining flour, marmalade, soy sauce and ginger.
5. Spoon sauce over hens in bag.
6. In a small bowl, stir together chicken stock, orange juice and Gran Marnier.
7. Add rice and chicken stock mixture to bag.
8. Close bag with nylon tie; cut 6 half-inch slits in top.
9. Bake until juices run clear and hens are tender, 1 to 1 1/2 hours. Let stand in bag 5 minutes.
