Ingredients
1 lb smoked turkey, deli; thickly sliced,chopped
1 tbsp chili powder
2 cups slaw cabbage; shredded
1 to 2 medium chipotles in adobo sauce; 1 avg heat, 2 extra hot
1 cup tomato sauce
3 medium scallions; chopped
salt
pepper
4 flour tortillas; (12-inch)
6 oz sharp or smoked white cheddar; shredded
2 tbsp olive oil
1 cup sour cream
2 tbsp cilantro leaves; chopped
1 medium orange or yellow tomatos; seeded, small dice
Directions
1. Preheat your oven to 400F.
2. Place turkey in a bowl and season with chili powder.
3. Add shredded cabbage, chipotles, tomato sauce, and scallions. Toss filling to combine and season with salt and pepper.
4. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute.
5. Place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps.
6. Brush the baking tray with olive oil. Brush the wraps with oil.
7. Place in oven and bake until deep golden brown all over, 15 to 17 minutes.
8. Top with sour cream, cilantro and chopped orange or yellow tomatoes.
