Ingredients

1 tbsp olive oil
1/2 small onion; finely diced
salt; to taste
pepper; to taste
1 clove garlic; minced
1/2 tsp oregano
1/2 tsp thyme
1 lb ground beef
1 large egg
2 oz feta cheese; crumbled

Directions

1. Preheat skillet to medium heat, and add olive oil.

2. Add onions to the skillet and lightly salt and pepper them. Cook onions until tender, 3 to 5 minutes. Add garlic , oregano and thyme to onions and cook for 1 to 2 minutes until fragrant. Allow to cool slightly

3. In a large mixing bowl, add ground beef, egg, feta cheese and onion mixture..

4. Mix by hand until the mixture looks even. Do not over mix because it can create a dense heavy texture. Cover the meat mixture and let it sit to marinate for about 30 minutes.

5. Preheat the grill or a skillet to medium heat.

6. Divide the hamburger mixture and make your patties. I make 4 patties that are large, round, and thin but you can make them any way you like.

7. Grill or fry the patties for 4 to 6 minutes per side depending on size and doneness you desire.

Stack the hot patties on hamburger buns, top with your favorite toppings and serve warm.
