Ingredients
4 hamburger buns
butter; softened
1 lb ground beef
2 chipotle peppers in adobo; seeded, minced
1 tbsp adobo sauce
1 clove garlic; grated
1/3 cup onion; chopped
1/3 cup green pepper; chopped
1/3 cup red pepper; chopped
1/2 tsp ground cumin
1/3 cup tomato sauce
1/3 cup panko
kosher salt; to taste
black pepper; to taste
4 slices pepper jack cheese; monterey jack or cheddar
lettuce
tomato slices
1 avocado; sliced
chipotle sauce; see recipie
Directions
1. Generously butter the insides of the hamburger buns with softened butter. Set aside.
2. Saute onions, green peppers, red peppers until softened, about 6 minutes. Add garlic and saute for another 1-2 minutes.
3. Place the ground beef in a medium bowl. Add the minced chipotle peppers, adobo sauce, sauteed vegatables, cumin, tomato sauce, panko, salt, and pepper. Mix until combined, being careful to not over mix.
4. Divide the seasoned beef into 6 portions and form patties that are about 1/2 inch thick.
5. Preheat the grill to medium heat.
6. Place the beef patties directly on the hot grill. Cook for 4 to 6 minutes and flip with a spatula. Cook for 4 to 6 more minutes, applying the cheese slices the last minute so it can melt. The internal temperature of beef should be 160F.
7. Place the buns, buttered side down, on the grill and grill until toasted, about 1 minute. Remove from the grill.
8. Top the bottom of the buns with lettuce. Add the burger patties, tomato slices, and avocado slices. Add the bun tops. (You can serve the burgers with chipotle sauce if you want to enhance the chipotle experience even more)
9. Serve immediately.
