Ingredients
4 lbs chicken wings; split
1 tsp salt
olive oil
barbeque rub; see Barbeque Rub
barbeque sauce; Sweet Baby Rays
Directions
1. Bring a large pot of water to a boil. Dissolve the salt in the boiling water. Add the chicken wings carefully.
2. Parboil for 15 to 20 minutes. Remove with a slotted spoon.
3. Dry wings well with a paper towel. Spread dry rub evenly on all sides of the wings and massage into the meat.
4. Grill wings on one side for about 3 minutes, flip all wings and brush barbeque sauce on the grilled side. After 2 to 3 minutes, flip all wings and brush barbeque sauce the top side. Flip one more time and remove after 1to 2 minutes.
Notes:
As a main course it is usually one pound of wings per person.
Grill timing depends on grill temperature.
